• Aioli Garlic Mayonnaise

    Crush the garlic with the salt and mix together until you have a really smooth paste. In another bowl mix together the egg yolk and lemon juice and then add the garlic and salt mixture. Mix well.Gradually add the olive oil, incorporating thoroughly before adding the next few drops. The sauce should become thick and creamy like mayonnaise. Use for fish or meat.
  • Parsley Sauce

    In a food processor fitted with the metal blade, combine the onion, garlic, red pepper flakes, parsley, lemon juice, salt and pepper, vinegar, basil and fish broth and puree. Transfer to a bowl.
