Sunny Greek Salad Recipe

Ingredients
  • 8
    cups
    mixed greens lettuce
  • 2
    tbsp
    lemon juice
  • 1/4
    cups
    very warm water
  • 2
    tbsp
    finely minced fresh oregano
  • 2
    small cucumbers, peeled and thinly sliced
  • 2
    large plum tomatoes, coarsely chopped
  • 8
    scallions, coarsely chopped, green part only
  • 1/4
    cups
    capers
  • 1/2
    cups
    finely minced fresh Italian parsley
  • 1/2
    cups
    crumbled feta cheese
  • 8
    Kalamata olives
Instructions
In a large mixing bowl, place the mixed greens. In a small mixing bowl, combine the lemon juice, warm water and oregano and whisk well. Drizzle over greens and toss thoroughly. Divide the greens among 4 plates. Top each with cucumber, tomato, scallions,capers and parsley. Toss gently. Sprinkle the feta evenly over the salads and garnish each with 2 olives.
