Banana Bread Recipe

Ingredients
  • 1/4
    tsp
    salt
  • 1 1/4
    cups
    brown sugar
  • 1/2
    cups
    butter or oil (canola, soybean, grapeseed, etc.)
  • 2
    beaten eggs
  • 1
    tsp
    baking soda
  • 3
    cups
    mashed, over-ripe bananas (2-4)
  • 1 1/2
    cups
    all purpose flour
  • 1/2
    cups
    chopped walnuts or pecans (optional)
  • 3/4
    cups
    blueberries (optional)
Instructions
  1. Preheat oven to 325 degrees F (175 degrees C).
  2. Lightly grease a 9x5 inch loaf pan.
  3. In a large bowl, melt the butter and cream together with the butter and brown sugar. Stir in eggs and salt until well blended.
  4. On top of the wet mixture, combine flour, baking soda and salt before mixing with the wet (don't overmix).
  5. Fold in chopped pecans and optional mixins (blueberries, white chocolate chips, etc.).
  6. Pour batter into prepared loaf pan.
  7. Bake in preheated oven for 1 to 1 1/2 hours, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Notes:

  • if using oil instead of butter, reduce to1/3 cup, optionally adding 1-2 tbsp of water or milk
  • using less bananas reduces baking time, while more bananas increases it
