Sweet Potato Masala Recipe

    sweet potatoes or yams
  • 1
    tsp
    brown sugar
  • 1
    pinch
    ground cinnamon
  • 1
    pinch
    ground ginger
  • 1
    pinch
    ground black pepper
  • 1
    tbsp
    butter
  • 1
    clove garlic, minced
  • 1
    tsp
    ground cumin
  • 1
    tsp
    paprika
  • 2
    tsp
    salt, or to taste
  • 1
    can
    tomato sauce (8 oz.)
  • 1
    cups
    heavy cream
  • 1/4
    cups
    chopped fresh cilantro
Instructions
  1. In a large pot, bring enough water to cover sweet potatoes to a boil. Add the sweet potatoes for 20-25 minutes (until tender). Set aside and allow to cool.
  2. Cut sweet potatoes into bite sized peices (you can do this before cooking).
  3. Melt butter in a large heavy skillet over medium heat. Saute garlic and jalapeno for 1 minute. Season with 1 teaspoon cumin, paprika, and 2 teaspoons salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes.
  4. Add the cooked sweet potatoes, and simmer for 5 minutes.
  5. Transfer to a serving platter, and garnish with fresh cilantro.
