Summertime Bruschetta Recipe

Ingredients
  • 4
    ripe plum tomatoes, finely diced
  • 1
    tbsp
    finely minced garlic
  • 1/4
    cups
    coarsely chopped fresh basil
  • 2
    tbsp
    finely chopped Italian parsely
  • 2
    tsp
    lemon juice
  • 1
    pinch
    crushed red pepper flakes
  • 1
    pinch
    salt
  • 1
    pinch
    freshly ground black pepper
  • 8
    1/4 in slices French or Italian bread
  • 2
    cloves garlic, halved
Instructions
In a large mixing bowl, combine the tomato, minced garlic, basil, parsley, lemon juice, red pepper flakes and salt and pepper. Toss well and set aside for at least 3 hours. Just before serving, grill or toast the bread and rub one side with garlic. Place a dollop of the tomato mixture on top of each one.
