Pumpkin Cheesecake Cookies Recipe

2.5cupsall-purpose flour

1tspleavening agents, baking powder, double-acting, sodium aluminum sulfate

2tspground cinnamon

0.5tspground nutmeg

0.5tspground cloves

0.5tspsalt, table

0.5cupsbutter, without salt

1.5cupssugars, granulated

1cupspumpkin puree
-
1egg
-
1tspvanilla extract
Instructions
- Preheat oven to 350 degrees and grease a cookie sheet
- Combine flour, baking powder, baking soda, cinnamon, nutmeg cloves and salt; set aside
- In a medium bowl, cream together butter and sugar. Add pumpkin, egg and vanilla and beat until creamy. Mix in dry ingredients
- Drop on cookie sheet by tablespoonfuls and flatten slightly.
- Bake for 15 - 20 minutes. remove from oven and place on cooling rack.
- (optional) Once the cookies have cooled, smear cream cheese frosting on the top and sprinkle cinnamon. Cookies should be stored in a cool, dry location. If you intend to keep them for longer than a week, skip the frosting and frost as you go. Cookies also freeze well.
