Pumpkin Cheesecake Cookies Recipe

    butter, without salt
  • 1.5

    sugars, granulated

    pumpkin puree

    egg
  • 1
    tsp
    vanilla extract
Instructions
  1. Preheat oven to 350 degrees and grease a cookie sheet
  2. Combine flour, baking powder, baking soda, cinnamon, nutmeg cloves and salt; set aside
  3. In a medium bowl, cream together butter and sugar. Add pumpkin, egg and vanilla and beat until creamy. Mix in dry ingredients
  4. Drop on cookie sheet by tablespoonfuls and flatten slightly.
  5. Bake for 15 - 20 minutes. remove from oven and place on cooling rack.
  6. (optional) Once the cookies have cooled, smear cream cheese frosting on the top and sprinkle cinnamon. Cookies should be stored in a cool, dry location. If you intend to keep them for longer than a week, skip the frosting and frost as you go. Cookies also freeze well.
